EARL CAVE POULET ET FILSEmmanuel took again the property in 2004, following his Alain father, and perpetuates the ancestral know-how transmitted of father as son since four generations. The vineyard of 20 ha is planted in small pieces on the slopes shone upon at the bottom of natural park of Vercors. This soil combines perfectly the heat of the summer and the rigor of the mountain winter. We practice a reasoned vine growing supporting the full expression of the soils. We use organic manure. Our output is control, which allows a minimal use of oenological product, for more the great respect of the wine.
That gives Clairette de Die tradition, Muscat majority with 25% of Clairette, extremely pleasant, of limpid foam, with flavors of dried fruits and citrus fruits, charmer.   Crémant de Die brut, of distinguished mouth, all in aromatic smoothness, is a very persistent vintage, finely bouquetée, of creamy foam.
The entirely glazed vault, makes it possible to the visitors to admire the Massif of the 3 Becs, as well as the first buttresses of Vercors, while tasting our wines: Clairette de Die and Crémant de Die.

Method Dioise Ancestrale for Clairette de Die: fermentation under controlled temperature, catch of foam out of bottle starting from the residual sugar of the grape, it is a naturally medium dry wine, without dose addition
Characteristics
Clairette de Die is a not very alcoholic effervescent wine and very fruity, whose foam papers well the mouth of its fine bubbles, without aggressiveness
Wine and food pairing
Clairette de Die on fruit tarts, pineapple carpaccio, vacherins, and Crémant de Die out of aperitif, on a crackling of smelts, gambas, a bar sauce basil or of the desserts to the chocolate and tiramisu
