The Carreau family have lived at Celles on Ource since 1543, their distant ancestors were already wine growers at the abbey de Mores, this wine heritage remains in the family and generations of wine producers have succeeded in Parmaille, Val of Porte, Bondonnot, Bochaut… names that will sing to the future creations of Lionel. He continues to respect the traditions of his father and his grandparents and passes them on to his three daughters often associated through his own brand, which has been established for about ten years. The cellar is that intimate place which sometimes resonate with the secrets of the past, Lionel and his father often reflect on the hours spent contemplating what will ensure the quality of future vintages whilst continuing to maintain their style. Tradition does not necessarily mean stagnation Lionel has an open mind when considering progress. He is anxious to work the vines with respect for the natural hazards of nature for the benefit of viticulture, to limit the treatments to only what the vine requires by working the ground mechanically and avoiding the use of weed killers and insecticides.
You will be able to discover Tradition blanc de noirs brut, a Champagne with character, produced from a single variety of vine the Noir Pinot, ideal as a most pleasant aperitif, with its beautiful golden color, fresh nose and has aromas of brioche and dried fruits, a refreshing Champagne for those special occasions.
The Cuvée Réserve, blended from the marriage of the pinot noir and Chardonnay grapes. The wine is left for a time without removing the sediment in the cellar for a result certainly worth waiting for, the bubbles are fine and delicate; when tasting one discovers a rich and subtle bouquet crated from the power of the Noir Pinot and a smoothness of the Chardonnay. In addition to drinking it in the original manner as an aperitif, accompanied with old Parmesan or small very dry goats cheese is a delight.
The Rosé with its coral color evident through a clear bottle is a result of using only the Noir Pinot grape, with it’s exclusive fruity flavors it may be enjoyed at any time,
The Cuvée Préembulles, is made from the vines of pinot noir, Chardonnay and pinot blanc and is the top Cuvée ideal for savoring those rare moments that we never forget, the color is lightly tinted amber viewed through it’s transparent flute, bubbles resembling fine lace adorning a haute couture garment. The nose has scents one associates the sea and Mirabelle plums. With a light freshness in the mouth mingling with a hint of lime which continues lingering on the tongue. The right blend to accompany a variety of seafood, fruits de mer for example or simply an ideal complement to a divine evening.
