LA COTE CHALONNAISE |
La délimitation de la production du Bourgogne rouge porte principalement sur trois départements : Yonne, Côte-d'Or et Saône-et-Loire. Le Pinot noir est le cépage de Bourgogne. Associé au Gamay à la mise en cuve (1/3 minimum de Pinot), il participe à l'élaboration du Bourgogne Passetoutgrain. |
