CAVE DRUSSE NATHALIE ET DAVIDThese young wine growers were rewarded in 2005 by the Départemental price for Dynamique Agricole. This winegrowing estate of 21 hectares has not used any more weeding chemical in the vines, which are enherbées between the rows and are worked on the surface with the feet, for several years. Nathalie and David Druze produce wines certified “Produit in conversion towards the Organic farming FR BIO-01”.

It is always the best Saint-Nicolas-de-Bourgueil rouge Vieilles Vignes 2015, resulting from a soil argilo-limestone, marked by the black fruits (morello cherry, prune), of intense color to the black reflections, the powerful red fruit flavors (blackberry, wild strawberry…), with well coated but balanced tannins, perfect with a joint of pork baker or gilded cockerels.

Their other Saint-Nicolas-de-Bourgueil rouge Les Graviers 2016, elaborate on sand and flint soils, with the nose marrying the ripe fruits (blackcurrant) is of an unquestionable smoothness in mouth. Its discrete tannins are enough to emphasize the nuances of morello cherries, while leaving an air side to this wine.

Saint-Nicolas-de-Bourgueil rosé 2018, of salmon color, dry fruity and of a beautiful tenderness to the flavors of fishing and dry apricot is always a reference. Ideal with aperitif, with dishes recalling the summer, on a chicken poached in frost, Bavarian of sweet peppers to the tomato fondue or more simply a paella, a plate of seafood or sushis.

One still excites our papillae with their   Saint-Nicolas-de-Bourgueil rouge Amplitude 2015 (gold medal in Concours Général Agricole of Paris 2017), resulting from the slopes of micaceous chalk, intense color. An arc in aromatic black fruit sky is offered easily thanks to velvety tannins and ends in a spice fireworks. 12 years possible for ageing.

With not missing, their Bourgueil rouge Leroy de Restigné 2015, marked by its argilo-limestone ground, with the subtle stone-fruit nose, slightly spiced, all in mouth. Fatty tannins bring an irresistible side to him.

The vintage Intuitive will be of return with the year 2015, at the beginning of 2019 (medal of Argent to Concours Général Agricole of Paris 2018).
To note, a facility for this winegrowing estate to preserve authentic wines in their cave-dwelling cellar of Xème century.

Collect grapes with optimization of the phenolic capacities of Cabernet franc according to the type of ground. Severe sorting with harvest with partial seeding, traditional infusion wine making standard (carefully), out of tanks concrete and Inox (thermobabbited)
Characteristics
The expression of the soils is preserved to the maximum, fruity for the gravels and charms for argilo-limestones. The purpose of the severe selections are to banish green tannins and the bitterness. In our areas, Cabernet franc is a type of vine which requires many patience, attention and care, in order to work out greedy and tempting wines: a big challenge every year
Wine and food pairing
The rosé calls a pause in end of the afternoon, but also the crudenesses, the fish, the exotic dishes. Great user-friendliness for the vintage Les Graviers (dishes of summer, rib steak on the grill, toasts of Saint-Maure of Touraine) and dishes simmered for the fleshier wines like Les Vieilles Vignes and Leroy de Restigné
