DOMAINE MARTINOLLE-GASPARETS

DOMAINE MARTINOLLE-GASPARETSA small family property of less than 10 ha located since several generations in the tiny Hameau of Gasparets at deepest of Corbières area. Pierre MARTINOLLE (85 years) helped regularly by his children Jean-Pierre and Francoise, realizes there, in an artisanal and organic way, authentic and exceptional wines in the respect of the traditions which were transmitted to him.
Dry soils of secondary and tertiary origin with affleurement of limestone and sandstone, sunny exposure of the Corbieres area (and Corbieres-Boutenac), swept by the Cers (a North wind, cold, violent and protective) and the Marin (from the Mediterranean sea) which brings its soft and warm moisture. Traditional and organic vinification in centenary cement tanks for the reds, in stainless steel tanks for white and rosé. Ageing in stainless steel tanks and partly in oak barrels for the Corbières-Boutenac. Rosés are made by bleeding and / or direct pressing at controlled temperature. Whites are made by direct pressing.
Amongst the suggested range you can discover:
Red Corbières-Boutenac 2014 (organic, aged in oak barrels): with intense colour, very present tannins, a strong, very fleshy structure, with black jammy fruits notes, leather and underwoods aromas. Red Corbieres-Boutenac 2013 (organic): a vintage wine with full maturity, of intense color, in the aromas of blackcurrent and wood strawberries jammy fruits, with a nice spicy finish perfect with a rabbit stew or a pot of lamb with croûtons.
Red Corbieres 2014 (organic) : beautiful ruby colour, rich and fruity, velvety, nose dominated by spices and small red fruits, full palate, like this Corbieres red 2015 (organic), of a beautiful and deep purple color with aromas of jammy black fruits, violet, slightly spicy, ripe mouth, very good tannic base, to open on a caramelized rabbit with spices or a shepherd's pie.
Excellent White Corbières Bio 2015 (organic), Rolle and bourboulenc, all in finesse, fruity in the nose as in mouth (Citrus, Narcissus), combining roundness and persistence, all in seduction like the Corbieres rosé 2016 (organic), frank and fresh with notes of rose and pear. There is also this IGP white 2016 (Viognier, organic), wide and aromatic, combining finesse and structure, with white flowers and citronnelle notes, all in mouth or this red IGP Syrah 2015 (organic) (Le Sang des Pierres) all in roundness and freshness

Soil and exposure
Arid grounds of secondary and tertiary origin with outcrop of dolomitic limestones and sandstone, sunny exposure of Corbières (and Corbières-Boutenac), swept by Cers (a wind cold, violent and protective) and Marin (coming from the close Mediterranean sea) which brings its soft and hot moisture

Winemaking
Following the traditional artisanal organic wine production methods, the reds are matured in cement vats whilst the whites and rose in temperature controlled stainless steel vats, the red wine for the Corbieres-Boutenac label are transferred after fermenting to continue their maturity in oak barrels
Characteristics
Corbières reds are wines with powerful tannins but balanced, of a major red with a good for ageing potential, the dominant flavors are often red fruit flavors, decorated keys of garrigues or underwoods slightly spiced, into growing old, the wines often develop black fruit flavors jams, tannins become silky and subtle with a big length and can develop pleasant fume, roasted notes or leathers
Wine and food pairing
Coasts and rib steaks with ember, skewers of steaklets of duck to honey, ox stews and game (pheasant stinks some, wild boar stew, hare royale)
