"Everything we offer can be copied, except for one thing: the terroir", says
Érick de Sousa. Located in the heart of the Côte des blancs, his Champagne
is grown on the hillsides of Avize, Cramant and the Mesnil sur Oger, land which is
classified as Grands Crus Blanc de Blancs Champagne. Érick de Sousa, being
the fine wine-maker that he is, regulates temperatures at 18°C to preserve
all the finesse and aromas of his wine. With his old vines, the hand-picked
grapes offer a wealth of aromas. From the beginning, he opted for malolactic
fermentation in order to make the wines more rounded and
supple, and he uses chilling to preserve the transparency of his Champagne.
He works in accordance with the ancient methods he learned from his father,
notably the use of natural, organic fertilisers and the secrets of blending
wines for laying down, to enhance the balance of the champagne and offer
consistent quality.
Several of his wines are remarkable, such as this Cuvée des Caudalies with
its fine woody, mellow aromas, its harmonious, full-bodied structure and its
distinguished, racy qualities. Also the Brut Tradition, with its
long-lasting bubbles and its excellent balance, also available in
demi-sec, brut rosé...
