Resulting from a line of vine growers Champagne, Vincent Caillez succeeds his Daniel father in 2003. The vineyard, located in the middle of the valley of the Marne, extends on 5,60 ha from slopes. Concerned of the environment, Vincent Caillez practices the reasoned culture, proof of a grape of a great quality. The wine making is carried out in the largest respect of the Champagne tradition.
The Champagne cuvée Héritage, assembly with equal shares of three type of vines Champagne, vinified out of barrels of oak, ageing during 3 years in cellar, mixes savor and distinction, of light and persistent foam, with toast notes, of peach and nut, a robust, harmonious vintage in mouth, to uncork on a refined kitchen. Rosy brut the Adiana vintage (also available out of magna in limited quantity) is very charmer, of nice robe, very out of structure, with the subtle aromas where the red fruits and the violet prevail, of fruity mouth, very pleasant on foie gras semi-cooks or a spiced dish. Excellent Champagne brut cuvée Référence, floral, quite elaborate, with the discrete notes of nut and pink, rich and complex, a wine all in aromas. Nice brut Tradition (100% Pinot meunier), traditional and dense, marked well by its type of vine which gives him this scented presence in mouth and an some originality.
